Here's one with a difference. Chocolate is good for you; not the stuff in most candy bars which is mostly flavored oils, additives and a little chocolate. Not the other ingredients often found in cakes, cookies, candy bars and puddings. Coconut is healthy! This one is an exception! You can tweak it to make it GMO or sugar free! It's lactose and gluten free. Yum! Healthier Chocolate Pudding 1/4 C. unsweetened cocoa
powder Mix all dry ingredients together thoroughly until no lumps are seen. Add just enough of the coconut milk to make a smooth paste. Little by little add the rest of the coconut milk, stirring to mix smoothly. Place over medium-heat and stir constantly until it comes to a boil. Turn heat down a little and boil for a minute, stirring constantly. A silicone spatula works best. Pour into a non-plastic bowl or ramekins, or cool quite a bit a store in a covered plastic container. Serve if you wish with whipped topping - I use CocoWhip as it's natural, and sprinkle if you want with shredded coconut, chocolate sprinkles, or chopped nuts. Important Note: Chocolate is poisonous for dogs; it will make them very sick, and I don't think it's good for other pets either. Xylitol is safe for humans and does not raise blood sugar. But it will kill most other pets, especially dogs.
