Bird's Eye published this fast, healthy and delicious recipe.  It can be a whole meal or an after-school snack.

Deli Style Pasta Salad

8 ounces rotini pasta (Note #1)
frozen broccoli, cauliflower and carrots
1 small can sliced black olives, sliced
1/2 medium red onion, thinly sliced
1/2 pound chicken breast
1/2 cup reduced calorie Italian salad dressing
3 tablespoons shredded parmesan cheese (Note #2)

Cook pasta according to package directions, drain and cool.  Cook vegetables also according to package directions.  Drain and cool.

Cook the chicken breast; either sauté it or simmer in a little chicken broth.   Cool and cube it.

In a large bowl, combine pasta, vegetables, olives, onion and chicken.  (Note #3)   Add dressing and toss.  Sprinkle parmesan cheese over top. 

Refrigerate at least 2 hours before serving.


Note #1:  Spiral or radiadore pasta works well also.  I like tricolor pasta.

Note #2:  Please don't use grated parmesan;  only shredded will give the flavor and texture you want.

Note #3:  Two or three very thinly sliced red radishes are good in this salad, too.
