This delicious cake is mostly fruit, nuts and spices.  It's a healthier alternative to regular cake or cookies.

French Style Apple Cake

1 1/4 C. flour
1 tsp.
baking powder
1 tsp. baking powder
1 tsp. baking soda
1 tsp.
cinnamon
1/2 tsp.
nutmeg
1/4 tsp.
allspice
1/2 tsp. salt
1/4 C. butter or non-hydrogenated margarine
1/4 C. sugar
2 eggs
3 T. sour cream or lite sour cream
1 tsp. vanilla
2 large apples (2 cups shredded)
cooking spray
1/2 C. raisins
1/4 C. walnuts, chopped finely
1/4 C. (approximately) maple syrup
1/4 C confectioners sugar

Heat oven to 350°.  Butter a 9" x 9" cake pan.

Combine the flour, baking powder and soda, spices and salt; mix and set aside.

Cream together the butter and sugar.  Add eggs one at a time, beating well.  Add sour cream and vanilla and mix.

Peel apples and shred coarsely down to the core.  2 cups of shredded apple are needed.  Add to wet ingredients and beat well.

Add dry ingredients, mixing just until combined.  Turn into the buttered pan.  Bake for 45 minutes, or until toothpick inserted comes out clean.

Immediately spray with cooking spray.  Sprinkle with the finely chopped walnuts, and drizzle with the maple syrup. Sift confectioners sugar evenly over the cake; if needed, distribute sifted sugar with a pastry brush.

Cut in squares when cool.  Keep refrigerated.
