Here's a great recipe from an anonymous reader.  Thanks!!!  Especially from my hubby who LOVES hominy, and being a $%#& Yankee, I don't have a clue how to fix hominy. 

Hominy Egg Pita

cooking spray
1/3 cup drained cooked or canned hominy 
               (white or golden, your choice)
1/2 cup egg replacer (egg beaters)  (Note #1)
1/2 whole wheat Pita 
1 tbs. nonfat mayonnaise (Note #2)
1 slice nonfat cheese (American or sharp cheddar)
thin slices tomato

Spray 8" skillet with cooking spray. Add hominy and egg replacer. Scramble egg.  Spread mayonnaise inside of Pita pocket and add cheese slice, cut in half, tomato slices and egg-hominy mixture. Very filling and delicious.

Note #1:  For those on a budget or unable to get egg replacement, use 1/2 cup of egg whites and some saffron-based seasoning, beaten together with a fork.

Note #2:  I personally prefer Miracle Whip lite; a little more calories, but no hydrogenated fat and much better flavor.
