This no-bake pumpkin pie is sure to be a favorite since it's easy to prepare, and delicious to eat.

Two-Layer No-Bake Pumpkin Pie

1 prepared pie crust (or just line deep dish pie plate with graham crackers)
1 cup cold fat free or low fat milk (use 1 Tbsp in cream cheese
1/2 tsp
vanilla extract
1 16 oz can pumpkin
2 pkgs (4-oz) Instant Vanilla Fat Free Pudding & Pie Filling (regular or lite)
1 tsp.
pumpkin pie spice
4 oz. (1/4 cup) softened Neufchatel or lite cream cheese
1 Tbsp. sugar
1-1/2 cups thawed Cool Whip Lite whipped topping

Beat cream cheese until fluffy.  Add sugar and continue to beat.  Add 1 Tbsp of milk and vanilla extract, and beat until completely combined.  Set aside.

Pour milk into mixing bowl.  Add pumpkin and spice.  Beat on low until completely combined.  While still beating, add the 2 packages of instant vanilla pudding mix.   Beat until completely combined and no lumps remain.  Immediately scrape into deep dish pie shell or 2 regular pie shells.   Spread until even.   Top with cream cheese mixture.  Chill until firm.
