Sometimes you have almost no time to cook and want something savory.  The secret to healthy fast food is having some recipes and ingredients on hand that can be fixed in a real hurry.  Here's one from Rice-a-roni.

Parmesan Chicken Skillet with Angel Hair

Prep Time: 10 minutes Cook Time: 15 minutes

1 pound boneless, skinless chicken breasts, cut into thin strips
1/2 teaspoon
Italian seasoning
2 tablespoons margarine or butter  (Note #1)
2/3 cup milk  (Note #2)
1 cup frozen or canned peas, drained  (Note #3)
One (5.1-ounce) package PASTA RONI Angel Hair Pasta with Parmesan Cheese
1 medium tomato, chopped

Toss chicken with
Italian seasoning.  Sauté chicken with margarine in large skillet on high heat 5 minutes or until no longer pink inside.

Add 1-1/4 cups water, milk and peas.  Bring to a boil.

Stir in pasta, Special Seasonings and tomato.  Reduce heat to medium.  Gently boil uncovered, 4 to 5 minutes or until pasta is tender. Let stand 3 minutes.

Serves 4


Note #1:  Use non-hydrogenated margarine, or for a healthier choice, olive oil.

Note #2 Reduce fat and cholesterol by using low-fat or skim milk.

Note #3:  Frozen peas are a healthier and tastier choice.   If you must use canned peas, I would drain them well and add them at the very end, mixing in gently to avoid mashed peas.
