With abundance of summer produce, how about beating the summer heat with this delicious, healthy and easy pasta dish. It's sure to be a hit with raw food advocates.  We like it with thin spaghetti so the sauce clings and melds better.

Salsa Cruda with Pasta

8 oz. of your favorite pasta
1 1/4 lb. or 4 cups very ripe tomatoes, finely diced
1 scant tsp.
salt
1/4 cup finely chopped onion
1 lg. garlic clove, minced
sun dried tomatoes (optional)
3 Tbsp. olive oil
2 tsp.
dried oregano
1/4 cup Italian parsley, or 2 T.
dried parsley
2 Tbsp. fresh basil, or 1 T.
dried basil
8 oz. of your favorite pasta
black pepper
Parmesan cheese, grated

Combine chopped tomatoes, salt, onion, garlic, olive oil and dried herbs in a glass or plastic bowl.  If adding sun dried tomatoes, chop and stir into mixture. Set aside until pasta is done.

Add pasta to boiling water and cook as per package directions.  Add a glug of olive oil to the cooking water to help pasta stay separated.  Drain well.

If using fresh herbs, chop fairly fine and add to tomatoes.  Pour tomato mixture over hot pasta and stir to combine.  Sprinkle with grated cheese.
