From Virginia Wiedemann:  "Hey, what about breakfast?  Here's one healthier omelet with several different ideas for fillings."

Special Omelet

1 whole egg and 4 egg whites
1/4 Cup no-fat half and half, or 1% milk
1 tsp. corn starch
salt and pepper to taste
cooking spray

Mix no-fat half and half (or milk) and cornstarch until blended.  Beat egg and egg whites together with a fork, or whisk until fluffy.  Add milk mixture and continue beating until combined.

Spray a large non-stick frying pan lightly with cooking spray, and heat to medium.  Add egg mixture, cover and cook over low heat until set.   Add filling of choice, and fold over.  Serves 2.

Suggestions for fillings to be added:

  • Sautéed mushrooms and shredded low-fat or veggie cheddar cheese

  • Fried hash browns and onions

  • Cooked asparagus and shredded low-fat or veggie Swiss cheese

  • Shredded low-fat Monterey jack/cheddar cheese mix, top with warmed salsa and a dollop of sour cream

  • Any other of your favorite fillings or toppings

  • Check leftovers for any inventive filling
