Even people that normally refuse sweet potatoes may enjoy this version, and it's easy to fix.  Extra flavors are due to some unusual additions!    Sweet potatoes are high in nutrition and cheap as well - a bargain all around.

Sweet Potato Whip

2 lg. or 3 medium sweet potatoes
3 to 4 oz. lite cream cheese or Neufchatel
1 lg. ripe banana
2 Tbsp. butter or non-hydrogenated margarine
salt and pepper to taste

    Peel sweet potatoes, and cut into chunks.  Boil until fork tender, then drain well.  These can be cooked ahead of time, then heated, covered, in a microwave.  

    Remove cream cheese from refrigerator to soften.  Place hot sweet potatoes in a large bowl.  In a small skillet, melt butter over medium heat.  Banana should be ripe but not soft or brown.  Slice lengthwise in three slices.  Add to skillet.  Cook until banana caramelizes slightly, turn and continue until the other side is caramelized.  Add bananas and butter to sweet potatoes.  Beat with electric beater, or mash well by hand, until completely combined.  Add cream cheese and continue beating or mashing.  Test, and add salt to taste.  Sprinkle some pepper on top before serving.
