This sauce turns fish into a truly delicious dish, swimming with flavor.  

Tartar Sauce

1 cup mayonnaise, reduced fat or fat free
1 small garlic clove, finely minced
1/4 cup finely chopped onion
1/4 cup sweet pickle relish
1 tablespoon finely chopped red pepper OR pimento
black pepper to taste

Optional:   For those who like lemon on their fish, you may add 1 Tablespoon lemon juice.

Optional:   For red sauce, delicious for shrimp and crab cakes, add 1/4 cup chili sauce.   

Optional:   Add a few drops of hot pepper sauce for chili heads.

Optional:   Some people like a few shakes of Worcestershire Sauce added.   

Mix all ingredients.  This sauce improves if left in the refrigerator for an hour before serving.
