From Virginia Wiedemann: "Do you think that you don't like tuna fish? Especially the canned kind? Perhaps you've never had it prepared so the canned fish flavor and texture don't take over the meal. Here is a tasty tuna dish that may convince you that tuna can be good tasting as well as good for you." Tuna Bean Salad 1 15- to 20-oz. cannellini beans3/4 cup sweet onion, thinly sliced 1 1/2 Tbsp. extra virgin olive oil 2 Tbsp. red wine vinegar salt freshly ground black pepper 1 5-oz. can water packed albacore tuna Open can of beans, drain them, and put them in a medium bowl. Add thinly sliced onion, olive oil, and red wine vinegar and mix. Add salt and plenty of freshly ground pepper. Open tuna and drain. Add to the bean mixture. Mix and serve. Makes two very large, very filling servings, or three or four smaller servings that would go well with a nice green salad.
