I admit I have a sweet tooth. I love whipped cream, and even whipped topping, but I almost never indulge. Whipped cream is expensive, and high in calories and cholesterol. Other whipped toppings are a horror, nutrition-wise, with trans-fats and saturated fats, and high-fructose corn syrup, a dangerous sweetener. Neither are they cheap calculated by the pound, and have no nutritional value. How would you like one that tastes good, adds nutrition to the diet, is cheap, and is much healthier? It keeps for a week or so in the fridge, and can even be frozen. Healthier Whipped Topping 1/3 cup canola or other vegetable oil Combine the oil, lemon juice and vanilla in a small container, and place in the freezer to chill. Place 1/3 cup water in a microwavable container. Sprinkle the gelatin evenly and slowly over the surface so it won't lump. As soon as it is all soaked and softened, heat for about 45 seconds in microwave until dissolved. Set aside to cool. Place water in a deep, large metal or glass bowl and place in freezer to chill until ice crystals start to form, OR combine with a cup or more of chipped ice or ice cubes; stir to chill icy cold, then re-measure to 1 cup.
Add cup of dried milk to cup of icy water. Using an electric mixer, beat on high until stiff peaks form. This may take up to a minute. Sprinkle in the sugar while still beating. Then add the gelatin mixture in a small stream while still beating. Last, slowly add the oil mixture, still beating. Mixture will become somewhat glossy. Place in covered containers in the refrigerator until re-chilled. It will thicken a bit, you may stir to fluff it up again. Use to top fruit or desserts, or float a glob in hot chocolate.
