Unfortunately I cannot make this soup often due to hubby having an artificial heart valve and taking coumadin - among other things, spinach is very high in Vitamin K which maintains strong blood vessels (but also interferes with coumadin).  But you can enjoy it.  Serve small portions to small kids, tell them Popeye LOVED it!

Wonderful Spinach Soup

1 Tbsp butter or margarine (we use Smart Balance, with no trans fats)
1 Tbsp flour
3 cups defatted
chicken broth
1 cup cooked, drained spinach
1/2 t.
salt
1/4 t. black pepper
pinch of
nutmeg
sour cream for garnish, preferable reduced fat

Melt butter or margarine over medium heat in a large, heavy saucepan.  Stir in the flour and cook, stirring, just until mixture barely starts to brown.  Set aside to cool.

Place some of the broth, the spinach and seasonings in a blender or food processor and blend until smooth.   Add to cooled flour and butter mixture little by little, stirring and scraping.  Add balance of broth.   Bring to a boil, stirring constantly.  Lower heat and simmer for ten minutes to blend flavors.

Serve hot, garnished with a dollop of sour cream and if desired, another shake of black pepper
