I have chronic pancreatitis. Of course I am on a low fat, low protein, high carbohydrate diet. One of the things I have been told is that I should eat very well cooked vegetables and cooked or canned fruit. Why is that?
Cooking and canning breaks down the hard-to-digest parts of the food. You need things that digest easily, and raw fruits and vegetables make your whole digestive system work harder. The carbohydrates in cooked fruits and veggies is also easily accesible, once cooked.
