|
I forgot to put the sugar in the recipe. I did put sugar for the yeast but not for the rest of the ingrediants. Will I have to start all over?

On the way home from church in Lincoln, Nebraska, my father almost always stopped at a Jewish bakery on North O Street to buy a loaf for our Sunday dinner - it brings back sweet memories.
First problem; it may not be nearly sweet enough. Second, it may not rise enough as the yeast needs the sugar to work. Therefore you may have a dense bread without the characteristic sweet flavor.
If it was me, I'd experiment, but that may be a disaster too. I would take the sugar, add a little hot water to dissolve it, not much. When dissolved, add a little flour to make a thin paste. Punch down the bread to make a big hole in the center, pour in the paste. Then fold and knead again and again until mixed, then knead it VERY thoroughly and let the rising process proceed all over again. In fact, since the yeast will have "eaten" a lot of the existing sugar, I'd almost double the sugar.
Warning; if you are on a no salt diet and did not add salt to the challah, you should be alright anyway as is, because salt retards the action of the sugar and yeast.

Thank you very much for your answer. The last time I made challah was 30 years ago and I was talked into it for this year. Everyone gave me recipes and somehow, I forgot the sugar with the rest of the ingredients. Followed it through anyway and as you indicated, had a very dense bread....so, I started over again. However, I started the 1st recipe before I read your answer. I will keep it, though, since it is a good tip. Thank you again!
