Are you absolutely married to an Ouzo for your shrimp ??? Very Greek !
Maybe a pinot gris or lightly oaked semillon. It may partner well with Italian white varieties of arneis and garganega.
Also consider Hornsby's Crisp Apple Hard Cider [Plan B], or a crisp Belgium pilsner beer. [Plan c]
