Busy Day Lasagna
8-oz. box of lasagna noodles
Place olive oil in a heavy skillet. Add ground beef and sauté, stirring and breaking it up, until lightly browned. Drain any fat. Stir in Italian Seasoning, garlic powder and spaghetti sauce.
Smear a thin layer of spaghetti/meat sauce on the bottom of a large Rock 'n Serve, Vent 'n Serve, or Stack Cooker. Add a single layer of uncooked lasagna noodles, breaking as needed to cover bottom. Smear half the cottage or ricotta cheese on the noodles, and add half the remaining spaghetti sauce. Sprinkle with half the mozzarella cheese and sprinkle with Parmesan. Add another layer of noodles, the rest of the cottage cheese, and the rest of the sauce.
Cover, and microwave on high for 15 minutes. Remove and sprinkle with the rest of the mozzarella, then more grated Parmesan. Cover and microwave for 3 minutes more. Let sit for 5 minutes before serving.
You can cut calories by using very lean ground beef and reduced fat or fat free cheeses.
