Campers' Chicken & Rice


1 lb. boneless, skinless, chicken breasts 
1 can whole kernel corn
2 Tbs. vegetable oil 
1 sm. green pepper, chopped
1 ˝ cups barbeque sauce 
1 small red pepper, chopped, hot or bell pepper as desired
1 cup water 
2 cups uncooked instant rice

Slice chicken breasts into strips or chunks.  In a Microwave Cooker, heat oil and brown chicken slightly.   Stir in barbeque sauce, water, corn, and peppers.  Bring to a boil. 

Cover and cook on medium power for another 5 minutes.  Remove from heat and add rice. Cover.  Let stand 5 minutes until rice is fluffy.
