Cheesy Cauliflower or
Frosted Cauliflower A former consultant lost her recipe for Cheesy
Cauliflower. I made inquiries from manager Heidi Rosen, who passed it on,
and here's some responses.
#1. Oh yes!! I cook it often for my
family. It is yummy!! Clean the cauliflower and pierce the stem with
a knife so it cooks more quickly. Cook the cauliflower for about 5-8
minutes on high in a covered microwave safe dish. While it is cooking, combine
about 1/3 C of mayonnaise with about 2 Tbsp. of mustard a little salt and a
little pepper. Spread this over the cauliflower after it is finished cooking
then sprinkle about a cup of grated cheddar cheese on top. Put the cover back on
and let it stand for about 5 minutes then serve. This may sound disgusting but
it is absolutely delicious and I don't even like cauliflower!! Bon Appetit!

#2. Whole head of cauliflower with
leaves and hard part of core removed
1/2 cup mayonnaise
1 tsp. mustard
1 cup grated cheddar cheese
Rinse cauliflower and pierce stem (core) with a sharp knife, leaving the head
whole. Microwave on HIGH in the 3 Qt. Tupperwave (know the Oval Cooker but
doesn't work as well), using the cover as the base and the casserole as the
cover. The cooking time is 6 minutes per pound (weigh the head at the store).
Let stand an additional 2 minutes to allow for "standing time".
Uncover, drain the condensed moisture. Combine mayonnaise
and mustard and spread over the entire head. Pat the grated cheese over the
mixture. Cover and return to microwave for 30-40 seconds. Remove, slice and
serve!

#3. I believe the recipe she is looking for is the
one in Carolyn Dodson's cookbook. I went to her class years ago, and I
make this recipe all the time. Now I don't have exact measurements, but
here is the "not so fancy" details of the recipe:
1 head of cauliflower
1 package of grated cheddar cheese (2 cups) (mild, med. or sharp - all are good)
2-3 tablespoons of mayonnaise
1 tablespoon of mustard
Salt and pepper to taste
Remove outer greenery of the cauliflower and cut off about half of the "stalk".
With the knife, punch a couple holes in the stalk to allow air to enter. I
cook the cauliflower in the Tupperwave stack cooker (large casserole dish with
cover), but I am sure you could use something else - it fits perfectly in the
stack cooker though. Invert the cauliflower so the stalk is up, cover and
microwave for approx. 8 mins. on high (1000 watt microwave).
In a dish, mix the mayonnaise and mustard and then use a
spatula or spoon to coat the cauliflower with this mixture (you may not need the
whole mixture, just enough to coat). Sprinkle the cheese over the cauliflower
that has been glazed and cook for approx. 2 mins. or until the cheese is melted.
Cut the cauliflower off the stalk (throw away stalk), season with salt and
pepper and mix up the cheesy cauliflower mixture. I sometimes microwave another
30 secs. to one minute to completely melt cheese and make more gooey. It tastes
fantastic and has a million calories.
This is a "rough" recipe because I have made this dish so many times, but I am
guessing this is the recipe your customer is looking for. If she doesn't have a
stack cooker, she could actually cut the cauliflower off the stalk, microwave,
and mix other stuff to make it work. Hope this helps!

4. Frosted Cauliflower

People who do not like cauliflower seem to rave about
this. By perforating the base or core of any dense vegetable, you can get a
"porous" effect to speed the cooking.
1 medium head cauliflower
1/4-1/2 cup low fat mayonnaise
1/4 teaspoon salt (optional)
1-2 teaspoon prepared mustard
1/4 cup grated cheddar cheese
Paprika (optional)
Remove woody base of cauliflower, leaving cauliflower in whole head.
Aerate (pierce with knife) the core to make porous. Weigh cauliflower.
Place in 2 quart microwave casserole and cook, covered, for 6 minutes per pound
on High power (100%). Let stand a few minutes. Salt if desired.
Spread cauliflower with mixture of mayonnaise and mustard. Sprinkle
with cheese. Heat for 1 minute, or until cheese melts, on Medium-high
power (70%). Sprinkle with paprika.
