Mini Tea Sandwiches

      

1 8-oz reduced fat Neufchatel cheese, softened
1-2 Tbsp mayonnaise
1 - 2 Tbsp. Veggie Delight Seasoning
6 slices whole wheat bread
1 large cucumber, scrubbed
garnishes

in a Wonderlier bowl, mix together cheese, mayonnaise, and Seasoning, with a Saucy Silicone Spatula.  Set aside.

Using a Classic Sheer Midget Container or other cutter (in a pinch, use an empty tomato paste can with both ends removed), cut out four circles from each slice of bread (24 total rounds). 

Score cucumber barely through the peel with a sharp-tined fork. Thinly slice cucumber.  Place a cucumber slice on each piece of bread (you can anchor it if you wish with a tiny dab of the cheese mixture underneath). 

Fill a decorator bag with cream cheese mixture, and pipe filling onto each cucumber slice with open or closed star (in a pinch, place mixture in a sandwich or freezer bag, seal, and slip a small corner off the bag).  Garnish as desired. 

Possible garnishes are small pieces of pimento such as found in salad olives, pieces of chopped green or black olives, watercress or parsley leaves, thin carrot slivers or curls, radish slivers, celery heart slices, small bits of tomato peel.  Use your imagination and whatever you have on hand!

Chill until ready to serve.
