Orange Cranberry Sauce with Apricots

Serve this healthy and delicious sauce as a side dish, or relish with meat.  Great over cottage cheese or yogurt, too.


1/2 C. dried apricots
16 oz. bag cranberries, fresh or frozen
1 orange, zested and juiced
3/4 C. sugar

Place the apricots in the Chop 'N Prep Chef.  Replace cover and pull the cord several times until the apricots are chopped in coarse pieces.  Place the apricots and cranberries in the Tupperware Stack Cooker 3-Qt. Casserole.  Stir in the orange zest, orange juice and sugar.  Cover and microwave on High for 15 to 20 minutes.  Stir, and place in a serving container.  May be served warm or cold.

Note: for a 12 oz. bag of cranberries, reduce sugar to 1/2 C. + 1 Tbsp.
