Orange Salad with Citrus Vinaigrette


3 Tablespoons fresh orange juice
2 teaspoons fresh lemon juice
1/4 cup olive oil
salt and pepper to taste
8 large lettuce leaves
4 navel oranges, pared and sliced into 1/2" thick rounds
1 small red onion, cut into 1/4" rounds

In a Quick Shake« container, place the orange juice, lemon juice, olive oil and salt and pepper to taste.  Add blender insert and apply seal.  Shake until thoroughly mixed; set aside.

On a serving plate, arrange the lettuce leaves; top with alternating orange rounds and onion slices.  Just before serving, drizzle vinaigrette over all.

Makes 8 servings.
