1 large baking potato, pared
1 medium onion"
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
1 egg, lightly beaten
Canola oil for frying
Smoked salmon strips for garnish, optional
Chive strips for garnish, optional

  • Using Tupperware«  

  • In a medium skillet over medium-high heat, heat oil.  Using 1/4 cup Tupperware« Measuring Cup, place 1/4 cup of potato pancake batter into skillet, 2 pancakes at a time.                   

  • Cook until potato pancakes are nicely browned on one side.  Turn pancakes over and cook until golden brown.  Drain on paper towels.

  • Garnish, if desired, with salmon and chives.

Makes 12 pancakes
