1 pint fresh strawberries,
hulled & sliced
Place 1 cup of strawberries, 2 Tbsp. orange juice and sugar in a blender container. Cover; process until smooth. Combine cottage cheese and remaining 2 Tbsp. orange juice and grated orange peel in a small bowl.
Arrange greens on salad plates. Top with cottage cheese mixture, surround with strawberries. Sprinkle with granola.
Serve with strawberry sauce. Serves 4 or 5.
Note: if on a gluten free diet, substitute a mixture of chopped nuts, raisins and crumbled gluten-free ready-to-eat cereal,
