Veggie Pancakes

   

2 zucchini squash (approx. 6" in length)
1 large carrot
1 small onion finely chopped
1 egg, lightly beaten
3-4 Tbsp. all purpose flour
1 tsp Simply Garlic Seasoning
2 Tbsp. olive oil for frying

Coarsely shred the zucchini and carrot into thin julienne strips, and place in a bowl.  Add egg, onion, flour and Seasoning.  In a preheated fry pan, add 1 Tbsp. olive oil.  Scoop mixture with a 1/3 cup measure and drop into pan, flattening slightly.  Cook for 2-3 minutes each side on medium-high heat until golden brown.  Repeat until finished.  Serve immediately.

Optional Toppings:                


Salt & pepper to taste
Sour cream
Applesauce
