The famous recipe for Beverly Hills Cafe Meatloaf makes two generous loaves; you can freeze one, or slice when cold for sandwiches.

Several times when we were young, broke, and expecting company for dinner, I fixed a big pot of Potato Soup.  This meal never failed to generate raves and compliments. 

Polenta is an economical staple served as a side dish at many tables, Italian, Hispanic and more.  This is an easy and quick recipe, and by far the best I have eaten.

Any way to get the family to eat more veggies is always welcome, especially when it's disguised with an intriguing name like Toothpick Soup.

Pan de Batata is an enigma; translated loosely to 'Sweet Potato Bread', it's not made with sweet potatoes, nor is it a bread. Its also called Pan de Boniato. However you call it, it's a delicious treat.

The original Monte Cristo Sandwich has a clouded history.  Some think it evolved from a French sandwich called Croque Monsieur.  One more way to use up a bit of leftover roasted turkey or chicken is a healthier version of this famous sandwich.

*Greens, lettuce and cut herbs can deteriorate quickly in the refrigerator.  To save them and keep them fresh and crisp, rinse, shake out all the water possible, and wrap tightly in a lightweight dish towel.  I keep a number of cheap light towels especially for this purpose.  Try it!
