Bottom Layer:

1 cup/250 mL flour
1/4 cup/60 mL powdered sugar
1/8 teaspoon/0.6 mL salt
1/8 teaspoon/0.6 mL Watkins Nutmeg
1/2 cup/60 mL butter or margarine

Middle Layer:

1/2 cup/125 mL granulated sugar
2 Tablespoons/30 mL Watkins Lemon Dessert Mix
1/2 teaspoon/2.5 mL Watkins Baking Powder
2 eggs, slightly beaten
2 Tablespoons/30 mL water

Glaze:

1/2 cup/125 mL powdered sugar
1/2 teaspoon/2.5 mL Watkins Lemon Extract
1 Tablespoon/15 mL melted butter
1/2 to 1 Tablespoon/7.5 to 15 mL water

Combine flour, powdered sugar, salt and nutmeg in mixing bowl.  Cut in butter until mixture forms a soft dough.  Press into a greased 8 x 8 inch/20 x 20 cm baking pan.   Bake at 325F/ 170C for 15 minutes.  Mix sugar, Lemon Dessert Mix, baking powder, eggs and 2 Tablespoons/30 mL water;  spread over baked layer.  Return to oven and bake about 25 minutes.  Cool. 

To make Lemon Glaze, blend remaining ingredients until smooth.   Spread glaze over baked layers, cut into squares.  Makes about 2-1/2 dozen bars.
