1/2 cup butter
1 cup sugar
8 eggs yolks
1/3 cup orange juice
1/3 cup water
1/3 tsp salt
1-3/4 cps pastry flour (sifted)
4 tsp Watkins Baking Powder
1 tsp Watkins Vanilla
Preheat oven to 375ºF.
Cream butter, slowly add sugar. Add well-beaten egg yolks. Sift flour,
Baking Powder and salt together, and add alternately with orange juice and water. Add
Vanilla.
Bake in layers or muffin tins in oven for 25 minutes for cupcakes (will make 2 dozen
cupcakes), up to 40 minutes for 2 layer pans. Use Boiled White Frosting; you
may tint it yellow if you wish.
Stir sugar and water until dissolved, boil until thread stage or 246ºF with thermometer.
Beat egg whites until stiff. Very slowly pour hot mixture into stiff egg whites, beating constantly.
Add flavoring.
