Southwestern Pork Ribs

   

3-1/2 lbs./1.6 kg pork back ribs, cut into 2- to 3-rib portions
1/4 cup/60 mL Watkins Mesquite Barbecue Sauce Concentrate
1/4 cup/160 mL apple cider vinegar
Water to cover
2/3 cup/160 mL apple jelly
1/2 cup/120 mL Watkins Mesquite Barbecue Sauce Concentrate
1/2 cup/125 mL ketchup
3/4 teaspoon/4 mL Watkins Cumin
1/2 teaspoon/2.5 mL Watkins Garlic Granules
1/4 teaspoon/1.2 mL Watkins Cinnamon
1/8 teaspoon/0.6 mL Watkins Cayenne Pepper

In large saucepan, combine first four ingredients.  Bring to a boil; reduce heat and simmer, covered, 45 to 60 minutes or until ribs are tender.  Meanwhile, prepare sauce by combining all remaining ingredients in a medium saucepan.  Cook and stir over medium heat until bubbly.  Reduce heat and simmer, uncovered, about 15 minutes.   Remove from heat and cool until ribs are done. 

Grill ribs over medium coals for 15 to 20 minutes or until done, turning and brushing often with sauce.  Makes 6 servings.
