Vegetarian Rice Pilaf
A flavorful side dish with meat, fish or poultry.

   

2-1/2 cups/625 mL water
3 Tbsp/45 mL Watkins Chicken Soup Base
1 tsp/5 mL.Watkins Soup & Vegetable Seasoning
1-1/4 cups/325 mL any seasoned rice blend, uncooked
1/2 cup/125 mL chopped celery
1/2 cup/125 mL coarsely shredded carrot
1/4 cup/60 mL chopped green onion
1/2 cup /125 mL frozen peas

Combine water, soup base and soup & vegetable seasoning in medium saucepan; bring to a boil.  Stir in rice, celery, carrot, and onion.  Cover, reduce heat and simmer for 25 minutes, stirring once.  Remove from heat and stir in peas.  Cover and let stand 5 minutes.  Makes 6 servings.
